Description Abstract This chapter starts with a reading on diet in prehistoric times with a particular emphasis on the findings from Atapuerca, a site in Spain that has been declared “Patrimony of Humanity” by UNESCO. It includes a discussion on the Paleodiet. The section on the Roman diet includes a discussion of the foods and customs in Ancient Rome. It also includes a reading excerpt that presents an overview of the influences of different peoples on the Spanish diet. Key concepts introduced in this chapter are: material culture, social and religious considerations in food preparation and consumption, cultural exchange and transculturation. The chapter also includes sections on Hispanic food maps.







El capítulo presenta la relación entre comida y cultura para continuar con algunas de las tradiciones más antiguas en relación con la comida. Empezando con la Prehistoria y la interpretación actual de la dieta prehistórica o paleodieta, pasamos al mundo antiguo, Egipto, Grecia y Roma, cuyo estudio ayudará a comprender las prácticas alimentarias posteriores. El capítulo también destaca la relación de la comida con el nivel social y económico, además de importantes consideraciones éticas y religiosas relacionadas con la bebida y la comida.
